Sugar-free Fudge

This is a Sarah Wilson recipe I’ve pimped using silicone ice cube trays to create pretty shapes. ( If you don’t have silicone trays you can just pour the hot fudge into a loaf tin lined with baking paper and then cut it into squares when it’s set). I experimented with a hard metal chocolate mould I found at the back of the cupboard and ended up with a gooey mess trying to thaw them out of the tray!  You definitely need the silicone so you can peel the fudge away easily from the sides.

This fudge is a great way to satisfy a sweet tooth in those early days of giving up the white stuff. If  you or your family has got into the habit of eating sugary snacks in front of the TV in the evenings, these a much healthier substitute and they are full of good fats your brain, nervous system and skin will thank you for! Fat is also great for energy (I like to pop a few of these before a long run). You’ll find as you gradually phase out sugar you won’t crave sweet things so much anymore and you can reduce the amount of Rice Syrup in this recipe to your own taste.

Why use Rice Syrup? It doesn’t contain Fructose so the body has work a little harder to metabolize it. You’ll find it in most health food shops and you can use it to sweeten hot drinks, porridge & pancakes.

3 tablespoons of Coconut Oil

125g Rice Syrup

1tsp Vanilla extract

65 ml Coconut cream

350g Smooth Peanut Butter (sugar- free)

Sea Salt

For Chocolate fudge – 2 tablespoons of Raw Cacao nibs

 

 

Method:

Melt the Coconut Oil and Rice Syrup over a low heat stirring continuously.

Add the Peanut Butter, Vanilla, Coconut cream (Cacao if you’re making Chocolate fudge) and a good pinch of Sea Salt and mix thoroughly with a fork until smooth and creamy.

Pour into silicone moulds (or a tray lined with baking paper) and freeze for 4 hours.

Once set, run a warm butter knife across the top of the tray or mould to remove any excess fudge and make your shapes nice and neat. pop the fudge out of their moulds, sprinkle with Sea Salt…. Eat & Enjoy.
